Ingredients
- Approximately 1 kg strawberries
- 2 cups sugar
- 1 cup water
- Ice, for an ice bath
- Wooden skewers, as needed
Instructions
- Wash the strawberries thoroughly and dry them completely so the sugar syrup can adhere.
- Thread the strawberries onto wooden skewers, one berry per skewer, and set them aside.
- Combine the sugar and water in a small saucepan over medium heat. Do not stir or touch the syrup while it heats to 300°F (approximately 150°C).
- Carefully dip each strawberry skewer into the hot syrup, coating the berry with a layer of sugar.
- Quickly transfer the coated strawberries to an ice-water bath so the syrup hardens into a crisp shell.
- Let the strawberries sit until the sugar has cooled and hardened completely, then serve.
Dry berries are essential here: any surface moisture makes it harder for the hot syrup to form an even shell. Once the syrup reaches 300°F (150°C), work carefully and quickly from the saucepan to the ice bath so the coating sets crisp.
