Ingredients
- 1.5 pounds (approximately 680 g) boneless chicken breast, diced
- 2 tablespoons olive oil
- 4-5 cloves garlic, minced
- 3/4 cup sun-dried tomatoes in oil, drained
- 2 teaspoons Italian seasoning
- 2 teaspoons paprika
- 1/2 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1 cup orzo
- 2 3/4 cups chicken broth or water
- 3/4 cup full-fat coconut milk or heavy cream
- 2 large handfuls fresh spinach
- 3/4 cup freshly grated Parmesan cheese
Instructions
- Pat the chicken dry and cut it into cubes.
- Heat the olive oil in a large, deep skillet over medium heat. Add the chicken and sauté for 2-3 minutes, until the edges start to cook.
- Add the sun-dried tomatoes, garlic, Italian seasoning, paprika, salt, and black pepper. Cook for another 3-4 minutes.
- Stir in the orzo and chicken broth. Reduce the heat to medium, cover, and cook for 12 minutes, lifting the lid every few minutes to stir and prevent sticking.
- When the orzo is cooked through, stir in the coconut milk or cream and spinach. Cook for about 1 minute, until the spinach wilts.
- Stir in the Parmesan, remove from the heat, and serve.
