Ingredients
- 3 cloves garlic
- 1/2 shallot
- 1/2 cup fresh cilantro
- 1/2 tablespoon chili powder
- 1 tablespoon sugar
- 1 teaspoon curry powder
- 1/4 cup vegetable oil
- Juice of 1 lime
- 1 tablespoon dark soy sauce
- 2 tablespoons oyster sauce
- Noodles of your choice, one serving
Instructions
- Finely chop the garlic, shallot, and cilantro. Set the garlic and shallot aside and place the cilantro in a heatproof bowl.
- Add the chili powder, sugar, and curry powder to the cilantro and mix well.
- Boil the noodles of your choice according to their package instructions, then drain and set aside.
- Heat the vegetable oil in a skillet over medium heat. Add the chopped garlic and shallot and sauté for about 1 minute, until lightly browned.
- Carefully pour the hot oil, garlic, and shallot into the heatproof bowl with the cilantro and spices, then mix well.
- Add the cooked noodles, lime juice, dark soy sauce, and oyster sauce. Toss thoroughly until the noodles are evenly coated.
- Serve the chili noodles hot, with fresh cilantro or extra chili powder if desired.
The sauce is assembled directly in a heatproof bowl: hot garlic-and-shallot oil blooms the chili powder, curry powder, and cilantro before the noodles and final seasonings are tossed through it. Cook the noodles while preparing the oil to keep the full recipe close to its ten-minute target.
